These little cheesy cups are the perfect protein packed addition to a little ones lunchbox, although in saying that - Ben can demolish a handful when he comes home from work ravenous! 
They are simple to throw together and easily adaptable to what you have on hand or what your little one prefers, try broccoli, a little finely sliced spring onion or cooked meat, like shredded chicken or bacon.
Naturally free of gluten and grain and loaded with protein!  


3 eggs 
1/2 cup (packed) grated cheese
1 cup finely chopped or grated cauliflower 
1/2 cup flaked quinoa 
pinch sea salt 

Optional Garnish

Pinch of paprika, per cup
Teaspoon of puffed quinoa, per cup 


Preheat oven to 180° and place 6 medium muffin liners into a tray, or grease a muffin tray well. 
In a medium mixing bowl whisk eggs, add remaining ingredients and mix until combined. 
Evenly spoon the mixture into prepared tray and sprinkle with smoked paprika and puffed quinoa if desired, place into preheated oven. Cook for 12-15 minutes. 
Remove from oven and allow to cool. Will keep for a few days in the fridge.

Makes 6 cups.
