I parboiled peeled and cubed potatoes in salted boiling water then fried in a good glug of extra virgin olive oil, crushed garlic and smoked paprika. I used the same pan with a little extra garlic to quickly fry the prawns before piling them on a huge bunch of greens and kale from the garden which I'd massaged with olive oil and lemon juice, added a little sliced cucumber and half an avocado. Seasoned well with black pepper and sea salt and a drizzle of lemon juice and a handful of flat leaf parsley.
The boys both had a deconstructed version, which they could pick at - and it was demolished.
Simple and absolutely divine!
