Easing into the short week with the recipe for these delicious apricot and orange logs. Often it is the simplest of recipes that pack the biggest flavour and this can defiantly be said about these little beauties! These wee logs are the perfect size for chubby wee fingers and make a wonderful addition to a lunchbox for big or small! They can be thrown together in minutes and only contain a handful of natural ingredients, free of gluten, refined sugar, dairy, egg and nuts.
6 medjool dates
12 dried apricots
2/3 cup + 2 tbsp desiccated coconut - unsweetened
juice + rind of 1 orange
2 tbsp virgin coconut oil
Remove stones from dates and roughly chop, along with the dried apricots.
Place into blender and blend until well chopped and combined. Add remaining ingredients (minus 2 tbsp coconut), pulse to combine.
Put remaining coconut onto a plate to prepare for rolling.
Taking a tablespoon of the mixture at a time, roll with your hands into logs. I find rolling between four fingers and then pressing down each end to flatten works well. You could also roll these onto balls, or press into a small dish lined with paper to make a slice and cut into bars.
Roll each log in the coconut and place onto a plate or in a container.
Place in the fridge for at least 20 minutes to set.
